  • Damascus steel – For serious cooks, these knives are often handmade and are striking in design. They have a carbon steel core and a stainless steel exterior for extra strength and sharpness. 
  • Ceramic - Sharp and lightweight, ceramic knives don’t rust and rarely need sharpening However, they can chip and when they do need sharpening they require a specialised diamond knife sharpener. 

The weight of a good knife should be equally balanced between the handle and the blade 

If the handle is too heavy, it may not cut as effectively and if the blade is too heavy, it will likely be uncomfortable to use. 

Check the tang for a sign of quality

‘Tang’ refers to the part of the blade that extends down into the handle. Where the blade is one solid piece that runs down the full length of the handle, this is known as full tang and is usually the best choice. Full tang knives have better balance and a more robust design, there's also no danger of the handle breaking off or coming loose from the knife blade.
